I grew up eating lengua (E Euro Jewish) as did my kids (SF Mission tacos/burritos). Whenever anyone compliments them, I credit the lengua.

Those are "Tacos de Buche". That's how Carnitas are called in the north region of México.

Carnitas is usually pork shoulder, the butt, as some call it. Buche is the stomach.

Carbón and asada are cooking methods, not specific taco fillings. Technically a taco de carbón is filled with carne asada de carbón.

Birria is something different, you would use it as a filling. Taco de birria or somesuch (my spanish is rusted to hell)

Tacos de cabeza are a predominantly northern Sonora taco. We had them every Saturday in Hermosillo Sonora.

Also the picture doesn't match what I'm used too. Cabeza was braised and shredded. Sometimes included tongue and eye. Super tender.

My record is 15 tacos. Not street taco size either, full taco size like 6-8" diameter. 14cm or so.
