Bite-Sized Invite: Bake A Squash

A depressed Imgur friend told me they'd like a gentle nudge for cooking and cleaning every now and then. So I'm obliging any Imgurian who wants that little nudge. 

Today's invite is pants optional and ONE level of challenge.

If you're not feeling like doing a challenge today, skip it. Cooking and cleaning do not solve depression and some days neither of those tasks are feasible. If you feel guilt, you're letting this Bite-Sized Invite be more than an invitation.

L1: Eat something. Doesn't have to be squash. Could be a peanut butter and jelly sammich. Leftover ribs dipped in warmed up curry. A salad made entirely of raisins. Wait, is that even a salad?

I bought an acorn squash. Sliced it into four pieces. Scraped out the goo. Buttered it up. Then I lightly sprinkled on maple sugar, an experiment. Baked for an hour at 375F / 190C.

During the last twenty minutes of baking I made this glaze. It's based on a recipe I read online but I kinda did my own thing. I browned the for a bit without anything else. Then, added butter and maple sugar, and sour cherries i wanted used up.

My only complaint was I should have cooked it longer. Let it thicken more. The maple sugar didn't add much. Having almost-caramelized nuts to eat with squash was fantastic. Nuts and squash! Fruit and squash! Who knew?

Mom would cut them in 1/2 (not 1//4s), clean the seeds out & place a heaping Tbsp of dark brown sugar in the hollow of each section, bake, then let a Tbsp of butter melt over that when they were done.

Joyous.

These days, I'm happy just eating them with a drizzle of olive oil, sea salt & cracked pepper. Love acorn squash.

Ooo, that looks nice & fancy! Did it taste like a dessert or was it salty-sweet?
In other new, not five minutes ago I was actually thinking how it's too bad there's not Bite-Sized Invite today because I actually cooked some real food this weekend! TWICE! Was it very good? No. Was it bad? Also no! Considering my general state these days, I count that as a win. Like, I even prepared meat! AND A ROUX! 🤯

Tasted sweet salty. I think next time I'll follow the recipe more exactly instead of estimating quantities by eye.
