I went to a special place. It’s hard to find one this thick. #banana_for_scale
Tried coffee rub for the first time. Lots of pepper and some herbs. No salt yet. I’m not curing it.
121 for 3 hours, next time I’ll do123. French wine??? It’s pretty good... Heavily salt meat after it’s done cooking, or at table.
As hot as possible. I use my smallest grill so the coals are as close as possible. It’s also the only one I have.
Every side, minute or so is all you need.
It’s black and blue. A few degrees more next time, but I love it and the reheated leftovers will be perfect.
Cilantro chimichurri on wedge salad. Baked potato with sour cream. It was as good as it looks. I had to lay down after. Coffee rub was epic. No real coffee taste, but a depth to the natural meaty richness. Will do again, no question.
Don’t forget to do your taxes. I can kiss his belly, but I don’t recommend it to anyone else. If you aren’t going to celebrate this President on Presidents’ Day, celebrate that it’s a four year term and that we will vote with ballots not bullets. It might be the red meat and wine talking, but I love you guys.

Hey man, check your water temp with a real thermometer. My anova is 2 degrees high on the readout. but awesome steak.

Joule water bath thing. Mixes water while heating to keep consistent temp. It’s pretty nice... you can get cheaper ones that do the same.
