My daycare owner is amazing. Her and her entire family have been with us since our son was born and they all have been amazing and kind. She has given us so much food over the years. In return I made bread and hot sauce.

She is Somali and her husband is Kenyan. I wanted to try something different so I found Mandazi. This was my attempt at it with her own recipe as a guide.

Ignore Lucas the spider in the background. I didn’t wanted Baby spice near the 350 degree oil so I distracted him while I deep fried them.

A close up view.

The final batch. I hope her family loves it.

just saying African beignets is a bit vague, is it not? Africa is a big continent.

This is the closest I could find. The recipe I got was directly from her. https://swahilifood.com/snacks/how-to-make-soft-mandazi-biegnets/

If you spill the oil on yourself.

Overcooking. Undercooking. Not mixing enough. Letting it rise too much. Letting it rise too little. Using too old of oil. Using too cold of oil. Just a few off the top of my head.

We've as a species been quite obsessed with bread over the centuries. Fried bread was Just the next natural step

I'd throw a slice of bread on top of making eggs. I thought I was being original. Oh. That's just French toast. I just like it spicy , not with syrup.

I didn’t attempt making sure I’m doing halal correctly. I don’t want to be disrespectful to their religion. Baking is always halal!

Does it count as halal if you fry the pastries in beef tallow or bacon fat?
