Not many things are on every menu in Spain, but Patatas Bravas must be up there as one of the most ordered tapas. Beautifully crispy twice fried potatos with a super spicy sauce, its easy to see why its so popular! I fell in love with all things Spain during trips to Barcelona, Valencia and Madrid. I can't wait to go back as soon as possible.
To make this at home you need:
1kg potatoes cut into 2cm cubes
500g plum tomatoes
1 small red onion, diced
2 garlic cloves, crushed
3 tsps sweet paprika
1/4 tsp cayenne pepper
1 Bay leaf
1 tsp sugar
1 tbsp chopped parsley, for garnish
Vegetable oil, for frying
2 tbsp olive oil

You can see how fucked up the Teflon is, exposing the aluminum. Teflon can't withstand silverware or metal spatulas. Use silicone or wood.

Most of the bravas I see here (BCN) have some sort of aioli or mayonesa in addition to the bravas sauce, to smooth out the tartness.

Potatoes in small batches at 180 celcius for 3:30 to 5 mins. Second fry. Same temp but just 2 mins. Sauce for 20 mins in the pan.

It wasn't that spicy. I would swap the sweet Paprika for spicy. Not bad. I think my air fryer does better than the oil fryer.

It doesn't so much add flavor of its own as bolster some of the other flavors. Like adding a pinch salt to desserts makes them taste richer.

It just allows the tomato to break down with the spices before you blitz them. But yeah you could skip it and just do a rough chop.
