I guess this is what you get when you combine boredom with being newly single from a girl that hates spicy foods.

I saw this post here a week ago and favorited it, but rather than let it die in fav and forget purgatory, I actually took a shot at cooking it up. Apologies in advance, I was documenting on snapchat and it didn't dawn on me until after that someone from Imgur might actually appreciate what I was doing. So ignore the excessive emojis, or don't, I'm not your boss. Do you.

So to simplify it, meaty jalapenos poppers. I used 85% lean ground beef and mixed in shredded cheddar and pepper jack cheese along with some of my go to spices and a cracked egg. Next I chopped the tops off the jalapenos and hollowed them out before re-stuffing them with cream cheese.

Second pic is making me realize there might be something on my wall.... ignore that. It doesn't help with the cooking all that much. Step 2 was wrapping the peppers. I learned half way through that you don't need as much meat as you might think to cover them. The first 2 were giant meat monsters before I thinned them out a little.

I know the original post described them as smoked, but I live in an apartment and don't own a smoker. So next best thing is my trusty cast iron (Iron Drago) and an oven. I set to 375 and let them cook for about 20 minutes, rotating them once.

My tipsy attempt at an artistic cheese oozing shot.

Honestly for my first attempt with no instructions, I couldn't be happier with how they came out. Packed with flavor and had a nice kick of spiciness. I don't know why they're called armadillo eggs, because 1, armadillos don't lay eggs, and 2 nothing sounds appetizing about that... So I took it upon myself to rename them Dragon Eggs in honor of Game of Thrones which was on in the background of all this. Also, because they make you breath fire.

It's the closest you'll get to eating real dragon meat, while still maintaining a peasant status!

We both know good and well those overgrown iguanas don't count

Beef is not the same as reptile meat? Komodo dragons are as authentic as you are going to get ... geckos have a whole different flavour

Honestly, bearded dragons would be the next best option if they weren't so expensive. The price per lbs at those pet stores is outrageous

...then you have to feed them on gold nuggets to get the right flavour into the meat.
