most of the tomatoes in US grocery stores these day are bland/boring/tasteless/generic trash. - i grow 14 varieties of tomatoes in my garden, I make my own tomato sauce and paste, i dehydrate and pickle some as well. most of my 'tomato paste' is made from roasted tomatoes, peppers, rosemary, garlic, thyme and basil that i puree and strain and can because it's way more than i can eat fresh.
One sauce I make is what I consider a much improved version of ketchup with roasted habanero, piri piri peppers, tomato, garlic, onion + worcerstershire (or vietnamese fish sauce) and agave. - all the veggies are roasted together - I don't use garlic salt/onion salt etc. - I rarely use "ketchup" as a condiment; but when it is called for in a recipe I have this available as a substitute. - also blend a batch with some sour cream or ranch dressing to make an excellent fry sauce for dipping
