Ctrl-G to get special selects. Ctrl-arrows to jump to the start/end of a row/column. W/ shift to select.

The elusive tip I want is how to cut+paste values only (no formatting)....

I usually do ctrl + shift + V to paste as plain text. It will strip off any formatting though like dates.

Right click, hover over paste options, paste value only i believe.

Yeah, that's my current method, I just miss click when transferring more than a few items from PDFs to excel...
