Beef, pork, spicy sausage, rice, shrimp, and crab! With it's secret sauce. and my god it was amazing!

Yeah, although this looks great, in Louisiana you make a seafood gumbo or a sausage and chicken gumbo, but never both

Typical Cajun, and not all parts of Louisiana are Cajun. To be fair, OP did not say Cajun gumbo. Whole different level.

The recipe is simple. The ingredients are hard. I use local products, which are difficult to source elsewhere.

4a. Major omission! Season chicken liberally with salt, pepper, cayenne and hot sauce. Chicken should be red. DO NOT DEBONE!

2. Mix and stir over medium heat for at least 45 minutes.

1. Make a roux: flour and fat (good cooking oil)

5. Bring to boil. Simmer for 2-4 hours. I let it rest overnight in fridge. Heat and serve with steamed rice and filé powder to taste.
