Preview of Avocado Grilled Cheese

Ingredients:
Sourdough Bread
Ripe Avocados
Thick Cut Bacon
Pepper Jack Cheese
Jalapeno Pepper Jelly

Start by cutting the bacon in half and laying on a foil-lined sheet tray.

Bake at 400*F for 25-30 minutes, until golden and crispy

Once removed, move the bacon to a paper-towel-lined table to absorb any excess oil.

Reserve some of the bacon fat for cooking at a later point.

Using a knife, cut your avocado down to the pit. Then, while keeping the blade stationary, rotate the avocado 360 degrees. Lastly, twist the two halves to separate.

Using a paring knife, carefully make slices down the avocado.

At this point, we are ready to assemble the grilled cheese.

We will start with a light spread of the pepper jelly on both pieces of bread.

Next, we will lay several pieces of bacon. On top of the bacon, add the pepper jack cheese.

This will be the foundation and support for the avocado.

Using a spoon, carefully scoop out the slices of avocado and lay them out in a single layer on top of the cheese.

Finish the sandwich assembly with another piece of pepper jack cheese and top with the second piece of jelly covered bread.

On a hot (350*F) griddle, spoon 1-2 tsp of the bacon fat on to the griddle and lay the sandwich.

Let it sit, untouched for 2 minutes.

In another portion of the griddle, spoon an additional 2 tsp bacon fat and flip the grilled cheese. Cook for an additional two minutes. Remove when both sides are golden, brown, and delicious.

Finished Product:

This is by far one of the best grilled cheese sandwiches we have ever made. Using the sour-dough bread provided the perfect support and depth of flavor to go with the sweetness of the pepper-jelly, salty/savory bacon, ooey-gooey, spicy cheese, and fatty flavorful avocado.

If you are a fan of grilled cheese or avocado toast, this is a must try and will change how you look at grilled cheese.

Thanks, OP - this led me to eating almost half a block of extra sharp cheddar cheese. I know, no cheddar in recipe but it sure was good! 8)~

Looks like you use jalapenos in your pepper jelly. I'd like to recommend habanero instead. Less bitter, more burn, good flavor.
