If you like kombucha but don't want to spend the ridiculous amounts they charge for it at the store, you can make your own! It's not very hard or expensive. A little bit of an up front cost for the bottles, but once you got em, you got em.
I'm not going to go through the whole process, I'll link to a video below, but I'll go over what you'll need so you can decide if you want to try it.
You will need a wide-mouth gallon jar, a muslin cloth or tea towel, a rubber band, tea, sugar, and a Scoby. I'd also recommend some flip top bottles like these for the secondary fermentation.
The only thing that might be hard to come across is the Scoby. You can buy one, get it from a friend, or grow your own from a bottle of store bought kombucha (it has to be raw and unpasteurized to do this). I was lazy and bought a Scoby from fermentaholics. They have a whole-ass kombucha making starter kit, if you really want it.
This is the Scoby. It may look disgusting, but it's basically a big ol colony of bacteria and yeast that ferments the tea. A big, thriving colony like this will give you some pretty good 'buch.
After your initial fermentation, which will take one two weeks, you will do a secondary fermentation with your flavorings! Here I did hibiscus, strawberry, lime, and a little pomegranate. Also, all the sugar you use in the initial fermentation gets eaten up by the yeast, so if you want it sweet you'll need to backsweeten it. I personally use honey.
Make sure you save your Scobies (they'll multiply) and some of the juice to make your next batch!
It's also so much more tasty than what you'll get at the store, too. You can decide how funky you want it, how sweet you want it, what flavors you want, and all that good stuff.
