Because I'm too lazy to look it up, what exactly *is* hummus made from?

What spices did you use?

Cayane powder, onion powder, black and white pepper, salt. I added sun-dried tomatoes and some citrus juice and extra virgin olive oil.

I don’t think I’ve ever seen hummus that yellow before. Is it because of added spices?

Overheard lightning was distorting the color. It was more reddish die to sun-dried tomatoes

Does it have enough garlic to tingle your tongue when you eat it?

I didn’t add any this time. Just some black and white pepper, salt, onion powder, sun-dried tomatoes, citrus juice

Removing the skins from the chickpeas makes for smoother hummus.

It's surprisingly easy. If you boil them in water with baking soda they peel right off

I just use these, 1.6€ for a KG. Rinse them well add salt, olive oil, pepper, paprika and whatever else I'm in the mood for and to the blender it goes. Fast, cheap and delicious.

1½ cups cooked chickpeas, drained and rinsed
⅓ cup smooth tahini*
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice, plus more to taste
1 garlic clove
½ teaspoon sea salt
5 tablespoons water, or as needed to blend
Paprika, red pepper flakes, and/or fresh parsley, for garnish

In food processor, whip the tahini and lemon juice for a minute. Add garlic, water, salt, chickpeas and whip till smooth. Drizzle in the oil at the end till it's smooth. You may need a bit more water, as well. If you add spices, like cumin, it goes in with the salt to be mixed.

Or replace the water with kalamata juice and top with some chopped kalamata.

This is a really base recipe. Work whatever spice blend you like ito it. I tend to do a double batch to fill the processor. Cumin, triple the garlic, smoked paprika and a pinch of cayenne is my standard. If you cook your chickpeas dry, a pinch of baking powder dissolves the skins. There's a million spice profiles - i tend to go light so you can taste the beans and tahini.
