A storm inside my heart
me and my girlfriend have been together for almost a year and a half, it's been great, we don't ever fight, we get along well, but i've recently reached a breaking point.
she is diabetic, and i can't get her to take her medicine, her body is slowly eating itself, i'm becoming horrified at her appearance, i don't know what to do anymore.

OP, you can't let her physical well-being become your responsibility. Keeping one body together is already more than most people can manage!

That does not give you the ability (or the right) to make decisions for another. I'm not saying there's no solution, but that's not it.

My mom does the same thing. Continues to pretend nothing is wrong, doesn't eat properly or take her meds, its heartbreaking. Hopefully (1/2)

I would suggest she see a mental health professional, but it seems you have already been down that road. I wish there was more I could do.

Don't let her wallow in denial. If you're not enough to convince her, find others to help. Also, get a doctor.

she's been seeing 2 doctors, a physical therapist, and getting counseling

Omy ~ it's hard to help people who don't want to be helped. And it's sad that they have to experience the worst of it before they realize it
