Lovely
Thank you. It was.

So, was it worth the wait? That's the reason I haven't jumped on the sous vide train yet.
Oh god yes. I like the set and forget bit, and the meat is so tender and juicy.
StayClassyPonyBoy
I've got one. Personally i think it's amazing. Better than how it does steaks, is how it does salmon. It's fantastic

You let all that juice soak into your cutting board. Shame on YOU!
Oh it was still plenty juicy, and I only have wooden boards. Didnt want to leave it on a cold plate.
That's why you pre-heat your plate ;-)
HeyOP
Not sure if you're interested in a critique or not, but (I feel) you need a hotter pan for that finishing sear.
Fair call, will try a hotter pan next time. Would you recommend butter or oil?
1) I'd recommend butter or bacon grease, honestly, but not too deep. In fact, smearing it on the meat thinly rather than in the pan
Ohhh a good reason to cook more bacon, I like it.
3) might be a good idea to keep it from cooking deeper than that surface sear. But I'm no pro, I just know what I like.
^should be 2. But if you've got some beef tallow, that also would be pretty great.

Good first try. More heat, less cook time. Don't ever cut it on a cutting board, that juicy goodness goes on your plate.
Unless you actually wanted Medium, then it looks good. I cook mine Blue or Rare so, I'm going off that.
Do you pre warm the plate? Seems like it would cool down the mea on a cold plate.
If I had some weird ass cold voodoo porcelain, I'd warm that bitch up first, sure. Takes what, 20 seconds?
Do you chill your plates or something? Why the fuck are your plates cold?
Because its just come out of winter here and I was cooking at night. Shits cold man.
Always been in the tropics. What the fuck is Winter? You mean Nicer Summer?
