1)Start by frying some bacon in a cast iron pan. caramelize white onion in bacon fat. Cook chopped sweet potato in mix.

2) cook potato till fork tender. Cook sweet peppers in mix till just tender. Add spinach and stir. Add 8 eggs and stir. Top with feta.
