Tacos envenenados (basically means super addictive)

Tacos Dorados Estilo Los
Envenenados de Zacatecas. The actual translation is poisonous or toxic or intoxicating or addictive. What do you think? I also sizzled some slices of seasoned pork shoulder to add.

First sweat some onions.

While your onions are sweating boil some taters. Whichever kind skins or no.

Now add your chorizo to the onions and break up. I usually make my own chorizo but somebody else in this house actually bought some from the white people store. No bueno, and it was in the freezer mocking me for months so I finally put it to use. And wouldn’t you know it, I had to fix it cuz what do white folks know, besides myself and Rick Bayless, about making chorizo. More vinegar, cloves and a few other things and it was somewhat passable. I almost busted out the achiote. The grind was off though. Oh well.

Soak chilis of your choice. Guajillos, puya, ancho etc. depends on your heat tolerance really.

Sizzle more onions and a little Serrano from the freezer.

While that’s going add your taters to the chorizo mix

Mash as much as you want or little. I like texture.

Blend your sizzled onion and Serrano with your soaked chilis with a little soaking liquid and pass through a sieve.

Now make your beans 2 days ago. Hahaha. Or open some canned beans. Canned beans are also a point of contention in this house. I prefer my own but sometimes canned works in a pinch.

Now blend the beans and add to the chorizo and tater mix along with the salsita.

Heat slowly until desired consistency.

Fill a CORN tortilla, not flour dammit, with the mix and a slab of cheese. Queso Oaxaca would be best but me nuh got dat. I forgot to take a pic of this but add some oil to a comal and shallow fry these babies until crispy. I adorned mine with cilantro, onions and some pork shoulder. I also made a salsa chili de arbol. Spicy!
