Different cars handle differently. In my experience, some of the nomad vehicles handle 2nd best. Motorbikes are easily the best.
Bikes can weave nicely and turn/stop on a dime. Nomad muscle car handled nicely as well

Yup, IMO starter nomad car and the one you get from the race missions are the best two.
The starter one is a bit slidey and bouncy, though it is one of the faster cars. I liked the nomad muscle car personally
