A lovely 8lb shoulder...
The dry rub that I made, then added some line and put in the oven to dry it out.
This lil piggy likes a pretty cross hatch

I love smoking pork shoulder as well. Makes excellent pulled pork or even just sliced into sandwich meat. ?

First time letting it get over 205. It was so tender that I couldn't pull it off of the rack in 1 piece. Best. Move. EVER!

Ohh, lovely! What temp and for how long did you smoke it?

I start at 200, and once the internal gets to 180ish, I bump it up to 225-240 until internal gets to 201. It took about 12 hours.

I wanted to cry when I couldn't pull the whole thing off of the grate. But my in-laws were happy to glean the scraps.
