In Germany bread is much harder than that. And I still love that slice! It's called Knust, Knerzl, Kanten or Knüppchen :)

In my region we call it 'kapje'. I thought the correct english word was heel.

That is my point, a heel from your loaf is not equal to the heel of the loaf in the picture.
