I made personal beef wellingtons!!!!

Final product first mine (right) and hers (the other one) served with roasted brussels and bacon drizzled with honey

This is the mushroom "paté" before removing the liquid

After. This reduced the size by a lot. Ingredients are as included:
About 15 baby bella mushrooms (1.5 of the large packages)
1 shallot
1/2 large onion
6 cloves garlic
8 sprigs rosemary
3 sprigs thyme
Salt/pepper to taste
1 tbsp plum jam (I'm thinking of adding more for next time)
Place all of these in a food processor and chop finely. You can do it in multiple steps if needed
Place in a cold pan with 3 tbsp of cold unsalted butter chopped up so it melts nicer

Assembly, mine (right) had a layer of prosciutto. She thought the flavors of too much meat would clash and requested none. I obliged.

Pre-oven bake at 425 for 20-25 min or until golden brown

I must say, for never having had a beef wellington, seen one, or watched on made on youtube I did fucking amazingly. This was an absolutely beautiful meal to bring in the new year and I'm definitely going to keep working on this recipe until I think it's perfect. As for the left over mushrooms, I've been eating it by the spoonful and I hate mushroom.

I also need to give a shout-out/big ol thank you to @grandfunkster for their encouragement, recipe, and posting their own originally which made me want to do this!
