I watched this with headphones and some nice speakers. You need to get some good speakers and crank them up, you will not be disappointed.

It's only binaural because of the mic that is used. Surround sound works too.

There are two audio channels, so sure. But it's more than that. The mics used are made to replicate the sound distortions of an outer ear 1/

Why are the sonic booms happening after the boosters land? I've only heard sonic booms when an object surpasses mach I mph!?

light travels at 3x10^8 m/s where as sound is 333 m/s. so the booms are experienced some time after. This also can be noticed with fireworks

Because of distance. Sound only travels so fast, and so you can see them land before the shockwave gets to where they were recording.
