Everyone needs a good pancake recipe

This is my super fluffy pancake recipe. I have tweaked and perfected it over the years to arrive at what my other half deems “the best pancakes ever.” He considers himself a connoisseur.

Ingredients:
1 1/2 Cups All Purpose Flour
1 Tbsp. 1/2 tsp. Baking Powder
1/2 tsp. Salt
2 Tbsp. Sugar
1 1/2 Cups Buttermilk OR 1 1/4 Cups milk (any)
1 Egg, lightly beaten
3 Tbsp. Oil (Canola, Veg, or whatever you like)

You’ll also been a medium sized bowl, liquid measuring cup, a good non stick pan, and a spatula that’s kind to your non stick pan

This recipe will yield about 6 medium sized pancakes. Perfect for a breakfast for 2. Or dinner, I’m not judging.

Step one, mix the dry ingredients (first four) together into your bowl until well blended. I think a fork is the best (and easiest) mixing tool of choice for pancakes. Don’t bother with a whisk, you’ll end up over mixing your batter later.

Step two, add your wet ingredients (last three) together in a liquid measuring cup or additional small bowl.

Give those wets a good stir with your trusty fork. Now before you go any further, start heating your pan on medium, medium-low, depending on your range top.

Look at that beaut. Take good care of your pans y’all.

If you have a good pan, do not oil it before you start cooking up your pancakes. You won’t need it. If your pan isn’t in great shape, use a paper towel soaked in a little oil to rub a thin layer on as needed.

Now go back to your batter.

Step three, make a well in your dry ingredients.

Step four, introduce your wet ingredients to your dry ingredients.

Mix your batter together until just combined, and all the dry ingredients are absorbed. Be sure to employ a folding method here. Do no over mix or stir vigorously. It will still look lumpy but that’s ok. #RealBattersHaveLumps

Your batter should be thick but pourable. If you need a splash more buttermilk, go for it.

Step five, get to cookin’. 5 to 7 inches is your sweet spot for width.

I’m a one pan kinda gal so I like to live on the wild side and cook my sausages on one side of the pan while my pancakes cook on the other. This requires precision flippage.

So the big question: when to flip. For my recipe, you won’t see a whole lot of bubbles popping like in others. I watch for when the edges look slightly set. I even give the bottom side a little tiny peek. We’re looking for a nice golden brown.

When you think it’s time, slide your spatula under and in one, confident motion, give that fluff puck a flip. Confidence. Is. Key.

Look how fluffy and happy it is. Sorry for potato quality on some of these photos.

Stack your pancakes off to the side but somewhere warm and give them a schmear of butter while they wait for their friends. #SaltedKerrygoldOrBust

This one kissed a sausage a little bit, but that’s the risk you take when you live the one pan life.

Tried to kind of show the edges setting here. You can’t see it very well but the edges should start to look slightly less wet.

A tiny peek here is harmless. That’s the golden color you’re looking for if you can see it.

Look at those beautiful golden boys. The sausages are whistling quite happy over there by this point. Don’t forget to butter each one when they come off the heat.

Pro tip: pull your maple syrup out of the fridge when you start so it will warm up. I even keep the bottle near my stovetop to let the residual heat warm it up.

Another one just before flip time. Slight bubble popage, edges looking just set. Keep an eye on your heat too, if you feel like they’re browning too quickly, turn your heat down a bit.

Step 6, enjoy your stack of fluffy goodness and congratulate yourself on a breakfast well done.

I hope someone appreciates this recipe as much as I do. I felt like sharing because pancakes make people happy and I think the world can always use a little bit more happiness.

You can do that, I use to but it didn’t make a huge difference for me and oil is just easier. I use avocado mostly so I take the lazy route.

Oat flour pancakes with pumpkin or bananas. Make a huge batch, freeze left overs and throw them in the toaster for breakfast the days after
