Dough: A bit under 1 kg of all purpose flour, 1 pack of yeast, 1 spoon of salt in a large bowl, mix like you mean it. In a small bowl put 1 pack of yeast, 1:1 water and milk, 1 spoon of sugar and 1 spoon of salt. Add content of a small bowl into the large bowl and use your hands to massage the dough, then make 3-4 balls and leave them to rest. Flatten with a rolling pin, cut into pizza-like cuts and...

Prepare baby-mozzarella balls (cut in half) and some filling (I used lightly smoked pork loin with tomato paste and oregano) then putt filling and mozzarella on the wide end end prepare to roll.

Roll them from the wide end, do not press-tighten, they need place to breathe and grow. The pointy end goes to the bottom to prevent unraveling. You can use lightly oiled oven pan or that nice baking paper. I'm out of paper because I'm impulsive and didn't plan well. Leave them to rest and grow in a warm spot while the oven is heating up. Right before you put them in the oven, use a brush to apply a paste made of 1 whole egg and a pinch of salt, then drop some sesame seeds on that sticky glaze.

After 15-20 minutes in a well heated oven at a 150-200 degrees Celsius, depending on your oven model.
