He's referring specifically to the heavy duty gas ranges at Chinese restaurants. It's sometimes believed they're 'necessary' to make stir fry and such because of the super high temperatures they can achieve. The little stove is just for the camera, so it can be done on the tabletop. Imo there's half a dozen other reasons "wok hei" is difficult to achieve at home, besides the temperature - prep and speed being the biggest one.
You can NOT get the best stir fry on your stove top. Sorry but ya can't, these are jet engine fires and perfectly made woks, it's inimitable. But it's still tasty on your own! Just don't buy a wok imo, the heat distribution is meaningless on a regular range, just do a good pan and work on stir/toss. And yeah prep, whole lot easier. Things go fast

Well it's just like, my experience comes from home cooking and renters shit. You don't get that glow on your average range. And a lot of people can't afford grills, don't have a good space to cook. That's all I'm saying. Pan and gumption can still get you a good fry
You can get "wok rings" to go on an ordinary gas stove, which are supposed to help focus the flame, but it's still not ideal. You can also get induction hobs specifically designed for woks, with a curved surface, but they're a little pricey and I've not tried them.
That's interesting... I hate to be THAT guy and be like, why am I paying for this when I could just buy a good pan. Granted I am poor and that could totally work for pricier kitchens than mine. Also I'm actually a mediocre cook I just drink and know things
I believe the point is the same as using a proper round-bottom wok in the first place: the stir-fry "tossing" technique is a part in producing the delicious flavors.

Not 100% necessary if you don't have bad soy sauce. Most of the Kikkoman in the is (maybe other non-Asian countries too) is not great. The flavor to salt taste just isn't there. Luckily, Hawaii makes some damn good soy sauce, and you can get it on Amazon. Look for the aloha brand soy sauce. You'll thank me later.
