Asian cucumber salad is my favorite way to eat cucumbers. It's easy and delicious once you get the hang of cutting. Everyone at your holiday parties will think you're so cool but little do they know how simple it is. I made this today and it was gone within minutes.

Recipe:
Place cucumber between two chopsticks. Cut thin straight slices, then flip the cucumber over and cut on the other side at a diagonal angle. Transfer to a large bowl and cover the cucumbers with the salt. Let the cucumbers sit for 15-30 minutes to release excess liquid. The longer you leave the salted cucumbers, the more liquid they’ll draw out and they'll soak up the sauce better.

*In this video I use chopsticks but once you get the hang of it you won't need them, they just help as guides.

Meanwhile, mix all the sauce ingredients together in a bowl, and adjust to taste. Drain any excess water from the cucumber and rinse. Then mix in the sauce. Let it sit for a few minutes to absorb the sauce then top with sesame seeds. This is best enjoyed cold and eaten right away. It goes great over some rice with salmon. Or as a side dish to some fatty Christmas meatses.

Sauce Ingredients:
• Soy sauce
• Fish sauce
• Gochujang
• Sugar
• Minced garlic
• Sesame seeds
• Sesame oil
• Rice vinegar
• Yuzu
• Salt

These are just the ingredients I like, feel free to replace or omit any. The world is your oyster, I believe in you. I know you can cut those cucumbers into perfect lil spirals. You show 'em who's boss! And even if they turn out really ugly I'm still proud of you for trying and I'm sure they're still delicious.

You can achieve the same or better flavour profile by not being a pussy, brewing a couple hot sauces and soy sauces at home, by about a week's worth of passive time investment for two years' supply of condiments with about $20 worth of ingredients
or, $2 of seeds, three months of passive time investment if you are really willing to get your hands dirty and plant a few things in pots around your backyard/balcony/living room corner

The only really specialized seasonings I see are Yuzu and Gochujang? Even those could be used in a lot of dishes. I have all the rest of these in my cabinet and use them for a lot of different food. (They aren't that expensive either)

That's right! I bought Gochujang when I couldn't find my favorite Huy Fong Sriracha or Simbal sauces any more. It's not the same, but close. And mighty tasty in lots of stuff.

The metric is not how full the spice rack, but how empty the spice containers are. But that only tells you if they /use/ them, not if they're good at using them. Using spices is an art, and you have to practise art.
