Made some pakoras this evening

Start to finish under 45 minutes. They're delicious. And throw in any veggies you have.

Recipe
250g Gram flour
50g Self raising flour
1tsp Tandoori masala
1tsp Garam masala
1tsp Hot chilli powder
1tsp Salt
1 tbsp Lemon juice

Mix all of these together with enough water to make a thick batter. Should coat the back of a spoon. Then leave to rest for about 15 minutes. While that's resting ..

300g Potato
300g Onion
3 Spring onions
2 Bunches of wild spinach (or baby spinach alternatively)
1 Chili
Handful of fresh corriander

Dice the onions and potatoes quite small. The aren't pre-cooked. Chop the onions spinach chilli and corriander. Add all of these to the batter made earlier.

I then let this rest again for about 10 minutes or so. Then in a heavy based pan heat and inch or so of oil ( drop a small amount of mixture in if it floats and turns brown the oil is hot enough ) and add heaped dessert spoonfuls of the mixture. Careful for splattering and spitting. The oil is very not!

Fry for about 2 minutes on one side. Don't worry about them looking like they'll fall apart. Once in the hot oil they stick together well, they just spread out a little.
Once golden brown carefully turn and fry on the other side.

Remove from the oil and drain on kitchen paper. Enjoy your pakoras.

Although these don't last long in my house, they do reheat very well in the oven to get them crispy again.
