So in a documentary I watched (thus, this may be full of shit) they suggested it's because that's how we as a species were before industrialization. We would wake in the middle of the night for a treat, some procreation, or whatever before going back to bed.

Yeah, with instant ramen (or in this case soba), you do kind of get what you pay for to a point. This one is usually a few bucks, less when on sale. There are brands though that are only a bit more than maruchan, but are at least still edible (many of the Korean "ramyun"s are inexpensive and still tasty).
