Day 1. Threw shit together because I forgot to go to the store today.
Corn Stir Fry. All fresh ingredients. Garlic, ginger, red onion, lemon, oyster sauce, white wine vinegar, soy sauce, cayenne pepper.
Toss the chicken in corn starch. Brown the chicken. Just before it is cooked toss in the aromatics and corn. Stir fry in a neutral oil and just as the corn starts to crisp, put in your sauce and vinegar with like a table spoon of water. Reduce until the sauce and starch have all combined and makes a semi thick but rich sauce. Add lemon to taste. The acid in the lemon will brighten and being out the ginger flavor.
If I were to change anything, I would garnish with fresh cilantro, maybe Julianne some carrots, but the sweetness might become over powering and possibly possibly add a Serrano pepper with the aromatics. It’s not necessarily supposed to be spicy, but my Latino palate needs some heat.

It came out really good. The oyster sauces gives a small punch of umami while the acidity from ginger and lemon brightened the dish. Happy
