For science (the other kind) and posterity, what's a good-enough Primanti sandwich recipe?

2 thick cut slices of italian bread. Cellones if they have it near you. Dont toast.
Meat, use your fave. I like pastrami. Then some provolone cheese. Then layer on fries- thicc cut. About 2-3 fries thick across the sandwich. Then slaw.
The slaw is vinegar based- no mayo. To make it, shred half an onion, a carrot, and a head of cabbage. Salt it, then heavily pepper it and add about a teaspoon of celery seeds. Add 1/3c apple cider vinegar and a slash of olive oil. Add sugar or honey and mix.
