As long as you make sure to get all the bones out. It tastes like chicken basically, but a lot bonier. Not sure how great it'd be in Sushi, but I'll give it a try.
Much more of a beefy, sweet flavor.... Again... I'd try it, but not sure it'd work in Sushi, or at least a maki roll. Probably more of a sashimi kind of thing, with maybe a sweet teriyaki or bbq glaze like they do with eel..
