Today's brunch special at work. Grilled cornbread, smoked ham, poached eggs, and house ground sausage gravy served over homefries and dusted with a brown sugar paprika spice rub. I'm very happy with how my breakfast sausage came out after modifying the original recipe with some fresh rosemary and sage. The special sold like hotcakes

I'll admit, it was a tad overwhelmingly rich. Need to give a couple dashes of hot sauce to add some acidity to cut through the richness
