1. Slutty Tacos: http://imgur.com/gallery/DyBQI . The dough also makes excellent frybread tacos http://imgur.com/gallery/RpSUJ ,or chimichangas . I'll be updating soon with homemade corn tortillas now that I have a good tortilla press.
2. Low and slow pork ribs with homemade BBQ sauce. http://imgur.com/gallery/IdTyk I'm still learning BBQ, but this is the first smoke job worth sharing.
3. Tonkatsu (fried pork cutlet) with Japanese Curry and Rice. First variation: http://imgur.com/gallery/2dnir
4. Homemade 5 cheese mac and cheese. First variation featuring sloppy scooping: http://imgur.com/gallery/kQZQn second variation (see below) has better instructions.
5. Char Siu Pork aka Chinese BBQ Style Pork Loin http://imgur.com/gallery/Y7NLm It made enough with lots of leftovers to vacuum pack and save for later. The pecan wood really augments the Chinese BBQ flavor. Absolutely delicious in bone broth ramen. Follow up plated pic and post : http://i.imgur.com/ncTCrVs.jpg http://imgur.com/gallery/1ZZ3X
6. Fake Asian Food http://imgur.com/gallery/vb3iw I'm not really sure where to place this one, but its delicious. After doing this a few times I recommend sake (rice wine) for the alcohol base for the marinade.
7. Tonkatsu (fried pork cutlet) with Japanese Curry and Rice http://imgur.com/gallery/2dnir part deux. If I find some interesting tips and tricks, I generally share them here. Special thanks to @bennettronic for helping me step up my rice game. After a suggestion by @TinyOctopus I plan on trying the curry with some potatoes next iteration. I'll be sure to share the results here.
8. Cast Iron cooking: Dutch Oven Bacon Chicken Corn Chowder w/ Green Chile. http://imgur.com/gallery/TvPV4 Good on the coals or even the campfire. Cream/roux/stock recipe is also good for homemade cream of chicken with less sodium.
9. 4th of July BBQ with low and slow smoked ribs and chicken thighs. http://imgur.com/gallery/mLgHh I'm still working on perfecting my BBQ skills, but these are the best beef and pork ribs yet.
10. Homemade Bacon Fat Tortillas http://imgur.com/gallery/SHe9h Regardless of nationality, tortillas are just something everyone should know how to make. Even in New Mexico the store bought tortillas aren't the same. FYI: You can substitute the bacon fat for butter high in cream fat i.e. European style butter.
11. Homemade Bacon Tempeh Burgers w/ Arrogant Bastard Onion Rings http://imgur.com/gallery/uNwIY Vegetarian food isn't normally my thing, but based on Stone Brewing Company's cookbook the recipe looked solid modified and with some added bacon. Second iteration I rolled the tempeh out, allowed it to cool, and then cut into patty sized shapes for later. Onion ring beer batter ended up perfect consistency.
12. Recipe Experiment: Redneck Sous Vide Ribeye Steak: http://imgur.com/gallery/6xzXx I know it's just a steak, but it was probably one of the best ones I've had. It made me actually consider buying a Sous Vide unit for better consistency.
13. Homemade Chicken Bacon Five Cheese Mac & Cheese http://imgur.com/gallery/vgUgX variation two. Variation one looks prettier, but I actually bothered to write shit down and measure the second time.
14. Cast iron cooking on the grill - Steak and Mesquite Fries: http://imgur.com/gallery/pIeT2 TWO TICKETS TO MEAT MOUNTAIN!!!
15. Green Chile Grilled Chicken Enchiladas http://imgur.com/gallery/IHsvE I like them rolled, but for large groups and batch cooking layered is a lot easier. Post includes lower sodium cream of chicken substitute in recipe.
16. Batch Cook: Grilled Chicken and Saffron Yellow Rice w/ vegetables aka rabbit food: http://imgur.com/gallery/1faUe Top pic is from my follow up batch all plated up. Post includes both one pot and rice cooker instructions.
17. Helper tax. I'm working on getting a few older recipes up along with some new ones like homemade chimichangas. While I'm a former cook, I'm always open to suggestions/tips so throw me a line. Hope you all enjoy! Feel free to favorite and forget.

Who is downvoting food?
usernamerelevantsoon
I'm not sure. Imgur's a mix bag. Sometimes my posts will get 2 automatic down-votes in less than a minute.

JohnnyManncok
OP have you ever been to cocos
usernamerelevantsoon
I have not. Is it in Albuquerque?
JohnnyManncok
No it's in Japan and some parts of Korea. I thought those Curry dishes were based off your experiences with cocos
usernamerelevantsoon
Ahh good stuff. A coworker of mine does a lot of Japanese food and suggested I try out the combination.

The food looks great and all but. . . Borders are the best dogs. The very best of all dogs.
usernamerelevantsoon
He's too smart. Worst trick I ever taught him was "trade." Now he'll grab the mail or something he knows I want, so he can get a treat.

That's adorable. We had a dairy farm; she was the herd dog and our love. My family just went to Scotland where they met a whole farm of them

*chili
usernamerelevantsoon
In New Mexico we tend to call it chile. I tend to think of chili as texas chili

Those slutty tacos look absolutely disgusting. I want 4
usernamerelevantsoon
i was inspired by a post from @sluttytaco - I had to make my own. Definitely worth making again!
usernamerelevantsoon
I will warn you. If you make them with homemade tortillas they're really filling. I was going to go for a third, but had to take a break.
SuperUse
I have an awesome recipe where i crush cheese nips onto gold fish crackers.
usernamerelevantsoon
throw some chili powder , cumin, onion powder, garlic and pepper and blam - you got some taco cheese nips with gold fish!
SuperUse
OR, hear me out here, I crush them up into a powder and pour it into my mouth with a funnel.
usernamerelevantsoon
what if, you combine that with beer? gamechanger!
SuperUse
Or instead of spending money on beer, I buy more cheese nips.
usernamerelevantsoon
you could. I think the combination would be better. Tell you what, I'm buzzed. lets make a friendly wager. If my post makes it most viral 1/2

I do not ever eat steaks in restaurants any more after having purchased a sous vide. The thing is magical and wondrous. Best $100 I spent.
usernamerelevantsoon
I suspect some of the best steaks I've had in restaurants were sous vide. Where do you find one for 100 bucks?
prettierandyoungerbutnotanybetteroff
Look on slickdeals.com for deals. You can find the Anova ones on sale pretty often. Such a good addition to the kitchen.
usernamerelevantsoon
good stuff, thank you +1

Oooo try steaks and chicken! I find with chicken you don't have to season it as much to get it to sink in. Good luck!
