Doing this improves the smoking of your turkey and reduces the cook time because more surface area is exposed. Want to knock your time in half? DO IT!

Create a hole in the skin towards the bottom of the breasts and cinch the turkey legs into it for more even cooking. You'll also need to place foil on the wings and drums about halfway through
