Red onions are the best onions. But in my opinion guac shouldn’t have onions at all. They add too much water

Guac is okay, I prefer a good Queso though.
Mostly because a lot of people put cilantro in guac, and it tastes like soap to me.

Pineapple is fine on a pizza especially with jalapenos. Ham on a pizza is gross tho imo

I agree. I've made it for commercial restaurants before and there are numerous better ways to make it. That is also a crazy amount of salt.

Idk, I think part of it is how quickly the 1 person can make it. This is at a festival that had 15,000 people at it. That guac lasted less than 10 mins before he started making more.

A large bowl mixer for the avacado, lime juice, salt and pepper. Chop your vegetables while it's mixing. Cut the mixer off, add your vegetables, your aromatics, give it a quick hand mix with a wooden spoon and serve. The way he's doing it is a mess with product loss on the table, is time consuming, and a waste of energy.

So you are chopping everything separately on that cutting board then putting it into a bowl? I don't see a reason for a bowl. This is at a festival, they have very limited space and water access. Having to constantly wash a bowl seems unnecessary
