This is Pinot Gris. We are about 80% done with harvest and I was lucky enough to make it out of the tasting room to see some action.
This style of press is used mostly for white wines as red are fermented with the the skins. This presses the whole cluster fruit and separates the solid from the liquids in the most gentle way possible.
Pinot Gris (a genetic mutation of Pinot Noir with lighter skin pigment) is one of our specialties. I can't wait to sell it!
