Finished product first.
Stockpot. This is not the soup, this is making the broth for the soup.
I don’t have a recipe for my broth, because it’s whatever vegetables that are past -prime but still good, or peelings, as well as chicken carcasses, or drippings from when i bake wings. Pure flavor.
When bag in freezer is overflowing, make stock. Broth. Whatever. Add bay leaves and season according to your heart. I used a lot of ginger and some dried california chiles for extra kick. (Fuck you, sinuses, you’ll get yours!)
I had a costco chicken carcass plus the juices from that bag, as well as some freezer-burned bits of chicken forgotten in the freezer, so those went into the pot, too.
Lots of garlic, rosemary, whatever suits your taste.
A splash of white wine brings out flavors.
Gotta add a good handful of salt. If the flavor is weak at the end, add some powdered bullion.
Bring to a boil, then turn down to simmer for between an afternoon to overnight. Try to get at least 3 hours before you strain it.
Strain all the solids out of your broth, it’s trash or compost bin for them. We salute their service. I get about 6 quarts, this is what didn’t go into tonight’s soup.
I had a rather large frozen chicken breast, I simmered that in the broth until it was *just* a bit underdone, set that aside in a bowl add whatever veggies you want.
I used
4 carrots
6 celery ribs
2 bell peppers (red & green)
1 zucchini
1 mexican/grey squash
1 brown onion
Several Tbs of microplaned fresh ginger (because again, fuck you, sinuses)
Dump all that in, gently boil in the broth ( ~ 50% on the burner dial) for 10 minutes. Carrots should be a bit firm.
Dice up the chicken that’s cooled enough to handle, toss it back in with some egg noodles for another ten minutes, wash your cutting board…
And you have soup.
And it was good.

man, I really need to start a stock bag in the freezer, I do it for bananas, for banana bread, my worms have been eating all my soup!... looks amazing, thanks for the idea :) +1
