Yes sous vide, no to butter in the bag. Butter is the baste, no butter in the bag. The best flavors of the steak are fat soluble, so slow cooking them in butter (fat) actually draws them out leaving your steak less flavorful. Butter things like fish and veggies if you sous video those, but never red meat.
Salt, pepper, garlic, and if you're in the mood, onions. I like to put some onions in butter and set it on the grill ad it's warming up. When it gets to temp, they're pretty much done. Throw in mushrooms if you want to. But yeah, the simpler the better.
I will say though: I knew a woman who ate her Steaks fucking WELL-DONE, DIPPED IN RANCH...and on principle of JUST THAT ALONE: I hated that person, and they're probably a horrible nurse if their career as a secretary was an indicator.
