I mean the sandwich looks pretty good but at this point you might as well chug directly on the bottle of olive oil. A bunch of oil in the pesto, multiple layers of oil directly poured on, then oiling up the greens. A single drizzle would be sufficient. This is like quadrupling the calories and fat of an otherwise healthy sandwich.

Oil is generally good fat though. Yes its high in calories, but its much better than a similar calorie load of high fructose corn syrup.

HFC is not fat... its sugar. But lets compare with something else entirely. Bread and peanut butter make a lot of complete proteins and is pretty easy to live off of... but if you eat 6000 calories of it then its not healthy anymore. And that goes for pretty much ANY food. It could be 6000 calories of carrots and it does not matter its still going to be bad for you. Its at a level that comparisons mean little. Its gonna end up as body fat.

I have not just heard it. I have SEEN it firsthand. My fiancee LOVED carrots growing up. And was eating baby carrots by the bagful almost daily. Then her skin started changing color and it looked like jaundice. Doctors ran tests and found her perfectly healthy except for a buttload of Vitamin A which a dietician informed them was from all the beta carotene in the carrots but she had eaten so much is was not breaking down. Really funny. A key difference is jaundice affects the eyes too.

Bingo. Everything counts in large amounts. A pound of salt will kill you (the Chinese used to use this as a painful execution method.) 55 cups of coffee will kill an average person due to caffeine OD. Even water drank in sufficient quantities will kill you by diluting your cells' electrolytic balance too far to support life. So even healthy stuff consumed in large amounts and and will negatively affect you.

Yeah that's absolutely too many strong flavors, and by the time he was finished making it the top bread looked soggy AF so even the texture got effed up. Why 4 different meats ? One on top of the other, no less. You won't even taste the bread and the mozza. I would still 100% eat it but it would have been better with half the ingredients. Pesto, tomato+salt, ham, dressed rocket, maybe the pepper it looked great.

tbh i'd go with the pesto, mozzarella, capricola or w/e the last meat was, and the roasted red pepper, and probably add a bit of hot giardiniera for some acid to cut through the richness/sweetness of the rest.

The same applies to a lot of dishes. Pizza, too. I regularly make pizza (from scratch) for dinner and I have a tendency to put more and more different toppings on to make it extra special, and instead of making it better it just gets blander and blander. Then you go back to a small number (e.g. last week I did pure tomato sauce, pepperoni, parmesan and mozzarella; nothing else, not even extra herbs) and it's a flavour explosion. Less is more.

Totally agreed. My go to sandwich is- mayo on both sides, super ripe tomato (with s+p of course) nice cheese like Monterey Jack, edam, or havarti. That's it. Heaven.

With the salami and pepperoni, you're noting tasting anything else in that. The ham and the think slice of the other meat are totally lost in this and serve no purpose. Likewise, the 1/2 kg of cheese with the cup of oil mean this thing is about 3 days worth of calories. You can make things taste great without needing 5000 competing flavours.

That's a simplistic view worthy of having no nutritional education. We can do better than that. The lowest amount of sugar in any of their normal sandwiches (the "tuna melt") is only 3 grams, so sugar remaining in the bread after fermentation is insignificant. If you're that carb-avoidant, you shouldn't even be eating bread. Fast food is "unhealthy" if you eat twice as much in calories as you need every day, but you don't *have* to eat that much.

Cooking video person here: there is always a little to a lot stuff left over from prep and shoot. Usually I bag it and use it for impro cooking the next day kr something, but nothing edible gets thrown away (unless I f up and forget about it). Also: the cutting shot you're seeing isn't necessarily from that very video shoot you are watching. We produce neutral b-roll and can reuse this footage a few times. Its just for illustration after all.

You salt certain ingredients if you want to bring out the flavor of that ingredient. Tomatoes chemically break down with the salt to make them sweeter and more robust in flavor

Yeah, a little sprinkle of salt (and freshly ground pepper) on fresh cut tomatoes is essential to bring out the flavor. I was going to complain about why he was using jarred pesto when it's so damn easy to make, but then I use jarred fire-roasted peppers, so I guess I can't complain.
