After having some issues from prescribed NSAIDs back in 21, I have to eat the right things, and frequently. Welp, after my divorce I haven't been able to eat the right things at the right times frequently enough. Oof! (Health issues are a lot of fun for financial stability, HAH).
The first time this happened was when my mother-in-law was passing. After my ex finally allowed me to go to her bedside, I was too afraid to tell my ex that I needed to get something to eat, so I stayed. Oof, that dizzy spell lasted about 2 years.
Bloody hell! I have quite a bit of food, but nothing that really helps with this problem. Erf! I am getting some help, but there's only so much that can be done, unfortunately. [growl], whatever.

Now on to our regularly scheduled programming.

Sorry you're having a rough time. When we don't feel mentally well, we often aren't physically well either. Here's hoping you can have some better days soon.

So I recommend a big bag of rice (I went with white) and a cheap rice cooker (they all operate on super primitive tech so no need for an expensive one) then figure out some spices you like with beans and stifried vegetables (I usually buy a cheap frozen bag) and you have a meal that does a surprisingly good job of making me feel better... Just need to mix up spices and sauces to keep things fresh... I am a fan of salsa or canned chilli personally...

Have a rice cooker, made sure I grabbed that before leaving that house, heh. And I actually prefer the cheep ones, had a higher priced one, that was hell to clean. Same with beans, I'm always forgetting those. However, it's the driving around with food that's the bigger issue. I need something that's heat stable, or cooler chest-stable. I tried to make some gorditas, but the masa I bought sucks. It'd be good for tamales, but not for gorditas, yeesh!

Since I'm going to miss my electric bill for about a week, I'll just use some of that to grab some food. I did make some refried beans, so some cheese with tortillas, that would be fine while I'm driving around. I can eat those cold, or stick them in the window to "cook". It's plenty hot around here, heh.

Oh, and no microwave. Everything has to be heated on the stove, but thinking about the rice you mentioned, there's a few things that just popped in my head. Going to grab some extra food stuffs, too.

My go-to’s easy healthy eating:
1. Shredded carrot and apple + raisins and lemon juice almost tastes like desert and can keep for at least three days in the fridge
2. Tuna mousse: Canned tuna (I prefer in oil). Lemon juice. Bit of mayo + crème fraiche or yoghurt. Dill (dried is ok). Salt, pepper and Tabasco to taste.
Chopped red onion and capers + eggs can be added
3. Salad nicoise (google it)
4. Add shredded squash or pointed cabbage to any pasta dish - mix it in (with any sauce) before serving

That'd be nice, but this...NERD/AERD/GERD like stuff is pretty weird, plus a few other issues I have with food not part of that, O_o. I would love to crunch on a lot of stuff, but no teeth, heh. So needs to be rather soft. Mayo & ghost chilis are a bit bad for my lungs, so I need to stay away from those. Luckily, I can eat some jalopenos now, heh. Hmm! I ought to try some squash. I know fried potatoes are better for my breathing than mashed potatoes are. ->

The tuna mousse is still good without mayo. You can add an uncooked egg (if you don’t have any way to keep the yoghurt refrigerated). Some eggs (where I live) is guaranteed salmonella free.
Do you have canned cod roe where you live? That’s awesome with lemon juice (and remoulade if you can eat that without issue).
I’d also consider (a light version) of your favourite dressing to mix with any salads - perhaps a mix of finely chopped iceberg and spinach.

Oh! Spinach (often available frozen) stew with feta, salt+pepper, olive oil and cumin.
And liver paste (can also be found canned) on soft toast bread.

Anyway, since I'm not going to make my electric payment this week, I'll spend a little I have of that to get some small amounts of food things. Stuff I have to carry with me while I'm driving, which is a lot, and I don't have any AC, so it gets pretty hot in my van. Ok! Ok! Ok! What am I going to get? Think think think!

Also: Finely chopped (can be prepared in advance) leeks or green cale can be added directly to cup noodles to make it (a bit) healthier and tastier.
Consider spicing with copious amount of chopped garlic, turmeric and ginger

And it’ll be very soft in the boiled water and easy to get down.
Again. You can always add an egg to get protein.
And another thing (if you like fish): Good sardines with lemon juice - on any bread - has been a stable for me when I don’t want to cook
