Hot chicken, Mayo, and pickle!
Dredged in flour, then in a buttermilk/hot sauce mixture, then back in flour. Mixed some of the buttermilk/hot sauce in the flour mix to make the breading “crumbly”.

Did you do the thing where you scalded ground cayenne pepper in hot fryer oil and sauced the chicken with it?

Lol is that what you call it? Yes I pulled some of the hot oil out and added the spices to make this.

Ever tried double? Gets VERY crispy. Super extra crispy if you refrigerate it and do the second fry the next day.

I haven’t! I assume you flash fry very hot to get the outside firm, then fry again at a lower temp? Or am I wrong? I want to try that now!

Opposite! Fry at 325 until light brown. 2nd fry at 375 for just a couple minutes. Longer between 1st and 2nd fry the better.

I'm making some tomorrow, going to do first fry in the morning, let cool, fridge it, then I'm refrying at 5 or 6pm.

Gotta try it! I’ve always heard double frying chicken wings are awesome. Thanks for the tip!
