Best recipe I've found: Cut about 1/3rd way in at 1" increments. Place on cookie sheet. Brush with olive oil and seasoning. Put in *cold* oven, set to 450oF, check at 45 minutes and add time as needed. Works well for sweet potatoes, too. Really brings out a rich flavor, especially with smaller or skinnier potatoes.

Nah - skip that and instead cover them in olive oil, salt and pepper. Gives the skim a nice crisp and good flavor.
