I agree. Very poorly done. It's an excellent piece of meat that someone just lobbed at a frier. It's like someone took a spanish honeyed

The best sushi place in my town makes a roll called the Spider Roll. Sushi with a whole fried softshell crab inside. Best fucking thing.

How do soft shell differ in taste than hard shell? I've only had hard shell and have issues wrapping my mind around eating the shells too

They're the same crabs, just at different points in their shell development/ molting cycle. The meat is about the same, you can just prepare

Soft shell differently. Hard shell you can't fry, because you'd just be frying the shell, soft shell you essentially fry the meat directly.

You also can't really season the meat on hard shell, but can do more with soft shell.

Lift the shell and clean the guts out before breading and frying. Soft crab sandwich is amazing. A sandwich w/ legs hanging out is surreal.

"softshell" means it molted recently. Got too big for the shell it was in and got rid of it to grow a new one. It basically shelled itself.
