Apparently humans cannot truly see yellow. We have no cones that process it, we can tell there is a color there, but we don't know what it is, so our brain just makes up a color for it. And as such some people have adverse effects from yellow. People with high levels of color receptors often favor yellow, which those with low levels tend to dislike it.

If you pluck a yellow dandelion blossom (from a plant that isn't grown in pesticide or other poison, and also make sure there are no bugs) you can just pop it in your mouth and it's a tasty healthful mini-salad.
The rest is all edible too--raw or cooked--but my favorite is cleaning the root and roasting it at 200f for a half hour or so and then grinding it up and making "dandelion coffee" with brown sugar and milk. Good stuff.
