I suggest sharing food. Tapas or Thali, that type of thing in your cuisine group of choice. It's more fun and always looks impressive.

ye old trick works on both them womens and them mens in yer life: Hey, GUESS WHERE WE GOING TO DINNER or 'GUESS WHAT WE HAVING TONIGHT?!' works like a charm, usually the first 2-3 guesses are that which they would want most. Works so much better than the 'what would YOU like' cuz then they are afraid what THEY like isn't what YOU want so will instead try to pick what you like to please the one asking.

Curry. If he wants to go all out, there's all kinds of fancy, if he's pushed for time jarred sauces are a godsend. If he's not a great cook, it's hard to do rice wrong. If he's a skilled cook, you're in for a treat. Curry never fails (I may be biased, as a brit).

Pick something comfort food that’s easy to make but a good dish. Mac and cheese and country fired steak or something. Leaves it open if he wants to go full out and prepare from scratch or just get some prepared food items and go that route. Unless your finance is a for real chef then I would have a different option.

Spaghetti, a "Grill meal" (meat, veggie, potato), doesn't have to be to crazy. If anything find a new dish/side dish that you both haven't tried yet and try that.

I recommend a pairing of garlic butter shrimp to go with the pasta as an alternative to grilled meat if you aren’t in the mood for grilled meat.
