The trouble is you don't get ideal conditions all the time, unless you're very selective about when and where you ride I guess. My experience is most situations where safety matters is a combination of factors, adding challenges makes things worse, and when it's driving vehicles it rarely involves just the driver. Even if she 'just' tips the bike over, she isn't wearing protective boots/trousers so that'll be an injury.
You can see her putting it in neutral in the beginning of the video. But she puts it in gear and takes off with three kickstand still down. If the safety switch was operational, it would have killed the engine the very moment the bike was put in gear with the stand down.
