The holes come from the manufacturing process (the clay is extruded through dies, like pasta). They make the blocks lighter, cheaper and more insulating.

Structural tiles are extruded. Adding features to another plane would require additional steps in the production, increasing the manufacturing time and cost. It also creates another point of nonconformity which is undesirable.

So the blocks have interlocking patterns on the sides but surely you'd need cement there too? They're grooves, not dovetails.
The grooves stop shifting/movement only in one direction.
Or am I missing something obvious?

Putting cement there would hamper the interlock, the cement would need to be so thin if you wanted the interlock to work it wouldn't be worth having there. I also notice all the construction is single block, even the outside walls, also they are butted against the other walls with straps to hold them, it's very likely this isn't the final finish. Not done anything with them myself but the principal looks ok, they only need to stop movement in one direction because up/down isn't going to happen.

yes, they use cement, or resin to lock each layer. the holes in the brick isn't there for cement to flow through, it's there for insulation.
