I had a variation of this for dinner tonight. Noodles in spicy chili oil with a ton of scallions and garlic. Did the microwaved eggs & mayo thing. Topped the noodles with the eggs. Lots of mild sauce on the eggs. Ate the entire huge bowl. Delicious.
Whip a dollop (generous teaspoon maybe??) of mayo into an egg and beat till it's smooth and incorporated in a microwave safe bowl. Throw in the microwave and nuke it for about 1 minute or till the egg is as set as you like it. Eat. The mayo gives the egg an incredibly soft and luscious texture and the flavor is great.
