A lot of modern vampire stories mention that they breathe only to appear human. Vampires are traditionally undead, though, and their hearts don't beat to circulate the oxygen via blood. My understanding is that they don't need anything (food, water, air, blood) to stay alive. They just get weaker if they can't drink blood.

(2/2) My theory is that their "need" to drink blood is part of their curse. They died by having all of their blood drained, and so they are driven by a desire to replenish their blood by taking it from the living.

It depends on the story.
In some there's a barrier, in others they simply are incapable of trying to do it.
As if their body is refusing to do the movement that would breed the boundary.
