I have a small kamado egg too, Ive been regretting not getting the bigger size the day after I bought it tbh. But the price difference was X2 and getting a new bigger one now seems like a waste to me.
Ive been grilling electric ever since Ive gotten solar, with broad cast Iron grill plates you can get grillmarks just as fine as in a regular BBQ.

The eggs are nice, but they don't offer a lot of room grillwise. Fully applaud making ribs; I've been itching to do so for weeks. As a suggestion, you might want to invest in a pellet grill for more space. My traeger is small compared to the big boys, but I can get two full racks laid out. Good on ya for making them, though!

When I do 6 racks it fits fine. I have done 9 racks successfully a number of times. It is true that since they are less exposed to the smoke the color varies per rib, but the taste is still excellent
