If you haven't tried huitlacoche, I can recommend it wholeheartedly. Cook it with a little onion, garlic and white corn kernels (if you can get them, if not yellow sweetcorn will do). It's usually eaten in a tortilla with or without melted cheese and some chipotle sauce or other salsa. It has a delicious kind of nutty, kind of mushroomy flavour.

I might try it next time if I get a chance. I came across it by chance. I was getting a cable installed at the bike shop next door and wondered next door while they worked on it. The shop usually has great produce and such but I’d never seen huitlacoche in person before. I wasn’t prepared to purchase it.

#10 Corn smut is a plant disease caused by the pathogenic fungus Mycosarcoma maydis, one of several cereal crop pathogens called smut. The fungus forms galls on all above-ground parts of corn species such as maize and teosinte, the infected corn is edible. In Mexico, it is considered a delicacy, called huitlacoche. The immature galls are gathered 2 to 3 weeks after an ear of corn is infected, and have a cooked flavor described as mushroom-like, sweet, savory, woody, and earthy.

Yeh I’ve heard of it but I didn’t expect it to see it in the shop. I certainly didn’t know what to do with it but I sure did find it interesting! Thanks for sharing the info for everyone.
